Spiced Apple Carrot Casserole, Another untried recipe but sounded good on this snowy Michigan day , This was so good!! used canned carrots and skipped the first step b/c I didn’t have any fresh ones I also didn’t have ground ginger, so I chopped up one small piece of candied ginger And I doubled the brown sugar b/c 1 tblsp wasn’t enough to sprinkle on 2 layers Delish! Placde 1 Inch Water in Saucepan, Add Carrots. Bring to Boil. Reduce Heat; Cover and Simmer For 7-9 Minutes, or Until Crisp Tender. Drain. |

in Small Bowl, Combine Sugar, Ginger and Nutmeg. in Greased 1 1/2 Quart Baking Dish, Layer Half the Apples and Carrots. Sprinkle With Half the Sugar Mix. Repeat Layers. Dot With Butter. |
