2 cups occident flour (bread flour)
2 cups flour
1/2 cup baking soda, into
3 cups hot water
sweet creamy butter, for 'dipping' face of pretzels after baking (melt butter, then let set a few minutes, and use paper towel to remove cream which will float to the)

    Auntie’s Delicious Soft Pretzels, Amish Recipe, WELL – this is a yummy one! My kids LOVE to help make these! ENJOY! D, Tasted great! My batch only made 8 as my dough did not rise I added a bit more water as the mixture was to floury I also would have added some salt into the dough But overall they were amazing!, Haven’t made this yet but I believe I know why there are so many too dry complaints Dough any dough should be made by weighing the materials 4 cups of flour loosely placed is about 125 grams packed and struck – 135 to 140 grams So 4 cups of flour could be 500 to 540 to 560 grams 1- 1/4 cups of water is 295 grams The water / flour ratio is then from 59 % down to 53 % Much too dry Get a metric scale and wheigh the materials They don’t cost that much I will try when my old age permits me a 65 % WC ratio, which is what i normally use for making bread So for 1 – 1/4 cups of water (295gms) the flour would be 454 gms Try that Feels to et? add a few gms of flour to feel right

    Add Sugar, Then Flour& Mix Well- Do not 'knead' as This Toughens the Dough.

    Shape Into Pretzel Shapes, Then Dip Into Prepared Dipping Solution.
