If you disagree with what the recipe calls for, either don't make it or tweak it. I know my grandparents, who immigrated from northern Italy would love these meatballs. My tweak is that I cook them before adding them to my marinara.

    Authentic Italian Meatballs, Meatball recipes are often challenged by chefs who claim, Mine are the best! Even though my meatballs ARE the best, I will make no such claim Try them for yourself! They are TENDER meatballs! I had no idea what that cheese is in the recipe, so used parmesan And I baked them at 350 degrees, 25 minutes, so I can freeze them Tender, tender, tender! I can understand if people want to customize it to their tastes, extra garlic or onion, etc But if you are looking for a TENDER meatball, this is the one!
