If you disagree with what the recipe calls for, either don't make it or tweak it. I know my grandparents, who immigrated from northern Italy would love these meatballs. My tweak is that I cook them before adding them to my marinara.

They are TENDER meatballs! I had no idea what that cheese is in the recipe, so used parmesan And I baked them at 350 degrees, 25 minutes, so I can freeze them Tender, tender, tender! I can understand if people want to customize it to their tastes, extra garlic or onion, etc But if you are looking for a TENDER meatball, this is the one!
