Spanish Potato Omelet (Tortilla De Patatas),The Spanish word fro Omelet is Tortilla, although it is nothing like the Mexican tortilla! A quick, delicious Brunch or weekday dinner doesn’t get much easier than this! Zaar World Tour 8,I love me a good Spanish omelet, and this one did not let me down. I usually use cubes of ham, but now I know I prefer the flavor of the bacon. This was a quick and easy weeknight dinner after we all had busy days. The only thing I changed was to cut the raw bacon into small pieces, and then fry it. I just find it a lot less messy when I do it that way. Plus, I can discard any fat I don’t want before it goes in the pan. I served it with spicy salsa and some sour cream. Made and enjoyed in Pammy’s honor. We’ll miss you!

Fry Bacon in 10 Inch Skillet Until Crisp. Remove Bacon, Drain All but 4 Tablespoons of Fat from Pan. |
