Awesome and Healthy Meatloaf, I came up with this recipe when I was unable to find exactly what I was looking for in my cookbooks I hope you enjoy it as much as we did!, Delicious! My husband had gallbladder surgery and I was looking for a healthier meatloaf recipe used super lean ground beef and made as directed but added some Quakers oats as well Thats just how I roll with meatloaf to firm it up but also for the added fiber For our (my) tastes I think Ill halve the oregano, up the basil, and lessen (or omit) the salt Hint: I cooked in one pan so took nearly an hour at 350, so adjust as you see fit I really dont want to cook meatloaf any other way now , Ive been making this recipe for a year and really enjoy it It is flavorful and easy I usually shape 4 burgers rather than mini meatloaves It works great with ground turkey, especially if you add a tablespoon of bread crumbs to hold the burgers together

Spray a Skillet With Cooking Spray. |

Add the First Nine Ingredients and Saute For 10 Minutes on Medium Heat. Allow to Cool to Room Temperature (put in the Frig to Speed Things Up). |

in a Large Bowl Mix Ground Beef, Egg, Salt, Pepper, 1/2 of the Tomato Sauce, and the Vegetable Mixture. |

Pat Into 7 Small Meatloaves and Place on Foil Lined Baking Sheet That Has Been Sprayed With Cooking Spray. |

Top Each Loaf With the Remaining Tomato Sauce. |
