Awesome Spinach Stuffed Chicken Breast, A chicken dinner worthy enough to serve to your best guests , I had to make some tweaks on this simply because I didn’t have everything on hand that I needed Used queso fresco instead of feta (because I hate feta), left out the bacon and nuts due to dietary issues and instead of the parm/Italian seasoning on the meat itself used 21 seasoning salute from trader joes I covered the breasts for the first 20 or so minutes of cooking and then uncovered OMG!!!! they were so delicious!!!! I will definitely be making this one again–may put bacon in next time, and usually you would never hear me say this, but in this case–bacon wasn’t necessary! thank you for an amazing recipe and the pinnacle of my anniversary dinner 🙂
