    This is definitely so Baaad! DH and I had it for lunch today and loved it! Made ours with marbled Jewish rye, mashed the beans, added a couple of tablespoons of mild salsa and some pepper jack shreds to the mashed beans. Omitted the onions since there were some in the salsa. More pepper jack directly on the bread. Yummy!! Hmmm ... Wonder how this would be as a quesadilla?? Nothing other than YUM, I'm sure!

    Babs’ Black Bean Grilled Cheese Sandwich,This little sandwich will make you want to slap somebody…probably me! I should have shared this little darling a long time ago. It’s not my recipe but my dear friend, Babs. The combination of pepper jack cheese and black beans with purple onion on rye is about all one could ask for in a quick fix that tastes utterly divine.,This is definitely so Baaad! DH and I had it for lunch today and loved it! Made ours with marbled Jewish rye, mashed the beans, added a couple of tablespoons of mild salsa and some pepper jack shreds to the mashed beans. Nothing other than YUM, I’m sure!,I didn’t have rye bread so used multi-grain. Next time I’ll use more cheese and less beans but I like all the flavors together.Update – made this again but lightened it up quite a bit and it was good. used a light flatout bread, reduced fat monterey jack cheese and butter spray for grilling. I’ll make it again – I figure it to be about 6 points plus for Weight Watchers.

    Heat Griddle or Other Skillet to Medium Heat.

    Lightly Spread Butter or Margarine on All 8 Slices of Bread, One Side Only.

    Place Black Beans on Several Layers of Paper Towels and Pat Them Dry.

    Cut Pepper Jack Cheese Into Medium-Thick Slices as You Would For a Grilled Cheese Sandwich. You Will Need Enough Slices to Make Your Required Number of Sandwiches.

    Have Your Chopped Onions Handy.

    to Build Your Sandwich:

    Make Grilled Cheese Sandwich as You Normally Would -- but Add Black Beans and Purple Onions in With the Cheese.

    Grill on Each Side Until Golden Brown and Check to See That the Cheese Is Nicely Melted on the Inside.
