Bacon Prawns With Cheese Dip

    This is another Claire Robinson recipe that I saw and made. The shrimp are great. The cheese dip is a little too thick (it would make a great topping for a baked potato, etc) and is really not necessary. Something lighter, such as a sour cream dip, might be better. I also had to figure out how to roast the jalapenos first.

    Preheat the Oven to 400 Degrees.

    Cut Each Piece of Bacon in Half and Put Them on a Baking Sheet. Bake Until Just Half Cooked, About 5 Minutes. Remove and Set Aside Until Cool Enough to Handle.

    Hold 1 Strip of the Roasted Jalapeno in the Belly of Each Prawn and Wrap It With Half a Piece of Bacon. Secure With a Toothpick and Season With Pepper, to Taste. Arrange the Prawns on Parchment-Lined Baking Sheet and Bake Until the Prawns Are Just Cooked, About 10 Minutes.

    Meanwhile, Make the Cheese Sauce by Adding the Cheese and Cream to a Double Boiler Over a Pot of Simmering Water. Make Sure the Bottom of the Bowl Is not Touching the Water. Slowly Stir Until the Cheese Is Melted Into the Cream.

    Transfer the Prawns to a Serving Platter and Serve the Cheese Sauce on the Side. Enjoy!
