Bacon Water Chestnut Appetizers

    Cuisine:

Oh wow! These little gems are so good: crunchy, savory AND sweet! AND making it so easy, too.

I made these for a ladies' out evening in my home, and they were a big hit--even with those of us who recently had a weigh-in for our "Biggest Loser" weight-loss contest!

So. Here's what I did: used two cans of whole water chestnuts--and had about five leftover at the end. used 1-lb of bacon CUT IN QUARTERS, and this made just the perfect bite-size morsel.

Next time I make this (and I will make this again), I plan to cut the sauce by half....much of it died on the bottom of the pan, in excess. AND I bet this sauce would be very persuasive if it had a squirt or two of yellow mustard--zippety-do-dah!

Sorry, Lavendar Lynn....forgot to take a pict when I plated, and by the time I remembered the plate wasn't very pretty looking anymore! :-)
