Baked Parmesan Fish, Healthier and tastier way to serve fish. I have used flounder, catfish, grouper, perch and tilapia with great results.If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did., Yum! Love this recipe, and everyone else does too, even the kids!! We have tried it with haddock, cod, and flounder., I followed the instructions but my fish didnt look anything like the picture – I kept looking at the directions on when to add panko breadcrumbs or other type breadcrumbs to get the crunchiness like in the picture – I baked at 350 for 30 minutes and it didnt look cooked so I raised the temp to 400 for another 10 minutes – I had thick cut pieces – – the taste was delicious but not close to what the picture looks like – was I missing something?
