1 1/2 teaspoons butter
2 jalapeno chiles seeded and julienned
1/3 cup sour cream
3/4 teaspoon fresh lime juice
to taste salt
to taste white pepper
to taste fresh chives snipped
to taste lime wedge

    Baked Salmon (with Lime, Jalapeno Chive and Sour Cream Sauce),,Next time I may adjust the temp or the cook time, as my salmon was a little over done. Other than that this was simple and quick to make and absolutely delicious!,Great recipe. The sauce was delicious, I swapped cilantro for chives as another reviewer did and will do it again bc I lurve cilantro. I think cooking the salmon at 500 was unnecessary, next time I’ll do a lower temp for the same time.Served with salads and lemon-cumin rice. Thanks for the keeper.

    Preheat Oven to 500 Degrees.

    Butter Baking Dish. Place Salmon in Dish Skin Side Down.

    Mix Lime Juice and Butter. Brush Over Salmon.

    Sprinkle With Salt and Pepper. Let Stand 15 Minutes.

    Bake Until Fish Is Almost Opaque, About 9 Minutes Per Inch of Thickness.

    Meanwhile Prepare Sauce:

    Melt Butter in Heavy Small Saucepan Over Medium-Low Heat. Add Chilies and Cook Until Tender, Stirring Occasionally, About 3 Minutes.

    Add Sour Cream and Stir Until Heated Through; Do not Boil.

    Mix in Lime Juice. Add Salt and Pepper.

    Transfer Fish to Platter. Spoon Sauce Over.
