Ingredients

Adjust Servings:
1/2 cup butter
1 (2 1/2 ounce) package taco seasoning mix
1 1/2 lbs sirloin tip steaks, cut into 1 inch strips
1 (16 ounce) can refried beans
2 cups shredded cheddar cheese
3 green onions, thinly sliced
1 (10 ounce) can red enchilada sauce
1 cup shredded mexican blend cheese
8 small flour tortillas (fajita size)

Baked Steak Burrito Casserole

    We absolutely loved this meal!!! From the first bite, you had to close your eyes and think MMMmmmmm. I did make some changes: used left over grilled steak (sirloin and rib eye) and white onion instead of green (Green onions would have tasted better, but I didn't have them). From reading Sheri's comment, I'm not sure why she didn't like the flavor, unless she used a yucky taco seasoning mix or enchilada sauce--used Taco Bell and Gebhardt, respectively. I only made six burritos, stuffed full and filled the pan. This is a keeper!! and answer to left over steak! The only bad thing I have to say about this meal is the amount of dirty dishes. Since there are no vegetables in this meal, a side is needed--more dirty dishes. Anyway a fresh garden tomato salad seasoned with sea salt and fresh ground pepper completed the meal.

    Baked Steak Burrito Casserole, This is a great introduction recipe to Mexican cooking Yummy steak in melted cheese rolled up in a tortilla, covered in sauce!     Heat Oven to 400 Degrees.

    Set Aside a 13x9 Inch Baking Pan.

    Melt Butter in a Large Skillet Over Medium Heat.

    Add Beef Strips and Cook Until Meat Is Browned and Drain.

    Warm Tortillas in Microwave About 30 Seconds.

    Spread Beans Onto Tortillas, Leaving a 1/4 Inch Border.

    Roll Up Tortillas and Fold in Sides (resembles an Enchilada) and Place Seam Side Down in an Ungreased Baking Pan.
