Bakinbaby’s Dijon Baked Cod, This comes from a Costco Cod package from Copper River Seafoods in Alaska. We like to bake our fish, so this is one of our favorites. Most ingredients are on hand like; mayonnaise, Dijon, lemon juice, parmesan, etc. and so low in fat!, Hubby hates when I try new things, but he loved this. I served it with coleslaw, perfect low carb meal., Delicious!! My husband and son said it was great. I made it with light Miracle Whip instead of mayo and used my homemade fermented horseradish. I will make it again and again and again.
