Balsamic Cashew Pea Salad

    Who could believe that something so simple and fast could be so good?! It took me all of 4 minutes to make and I loved it. I missed the "vinaigrette" part of the recipe, so like several of the other reviewers, I just used white balsamic vinegar. I made it the night before and the cashews were soft (in a good way). But if you want them crunchy, add them just before serving.

    Balsamic Cashew Pea Salad, This is perfect to take to a picnic during the summer months because it has NO MAYO!!! It is light, sweet and crunchy I got the recipe at Trader Joe’s this morning Feel free to substitute out balsamic vinegar instead of the vinaigrette we like it that way too!, Who could believe that something so simple and fast could be so good?!
