Banana Carrot Cake,From my mother-in-law. This carrot cake does not have a cream cheese frosting. I have not had this yet, but my hubby says it’s wonderful. He says that he can’t taste the bananas in the cake, but it’s been years since he’s had it, so that might be wrong. He says it’s really good though.,Three & a half stars. Cooking adjusted to 325F for dark nonstick baking pan. Tastes all right with nice banana aftertaste. However, this is not the carrot cake that I usually make (per ‘The Joy of Cooking’). And I added a half cup of raisins plus cream cheese frosting along those lines, but the flavor was more like a pineapple carrot cake, which we do eat. I am.impressed that it tastes so good without having to include granulated sugar ??
