Banana Fruit Loaf, I found this gorgeous recipe in Ruth Isabel Ross’ Irish Baking Book , which I had originally given to my mum as a birthday present when spending a year abroad in Ireland It is easy to make and just tastes so fruity =), ok wow 2 cups flour 1/2 cup sugar 1/2 cup sour cream per mersadees review baked in 400 degree oven not very long when i checked it , it looked like picture tasted wonderful bottom was little brown though easy to make, This cake turned out quite nice used dried blueberries for the fruit and had to use 3 large bananas to get the consistency right I cooked for about 1 hour in a fan forced oven as mine was still doughy in the middle at 45 mins the texture is quite spongy, kind of like a microwave cooked cake but the taste was quite good Thanks for posting!

Pre Heat the Oven to 180c and Line a Small Baking Tin With Baking Paper. |

Mix the Flour, the Baking Powder, the Sugar and the Raisins/Sultanas in a Bowl. |

Add the Egg and the Well Mashed Bananas. Blend Toghether (the Dough Should Be Soft and Creamy.). |
