Banana Nut Muffins, Healthy, I adapted this recipe from a mango bread recipe but substituted yogurt for sour cream, vegetable oil for butter, cut the amound of sugar in half and used local honey instead of sugar, and used whole wheat flour I also added almond meal, oats, flax seed, blueberries, and almonds to give some healthy fats, fiber, and sweetness The result is not too sweet but still delicious and somewhat healthy muffins This makes about 6-7 muffins, I live alone and do not need 12, but double if you need to make more :), These are awesome! I hate feeling like I’m eating dessert for breakfast, as some muffins and pancakes make me feel, but these are just right! Just enough sweetness to be yum, but not overwhelming! I did use vanilla yogurt, as that’s what I had on hand – so there was some extra sugar from that – and almonds were the only extra I added from the list Super easy and perfect treat for breakfast!, This is a nice dense muffin I added a touch more vanilla and some oats The 7 muffins were the right amount, and were not-too-sweet Thanks for a healthy snack recipe!
