Banana-Oat Bran Muffins,A yummy, healthy muffin with no added fat.,Turned out really good! I had read that setting out the wet ingredients to get to room temp was a good idea, so I did that. I also added frozen blueberries, chopped strawberries, and almonds. They were fluffier than any bran muffin that I’ve made and it was AMAZING that they didn’t have eggs and butter! I froze 1/2 of them and next time, I’ll make double to have them around for even more breakfasts! Thanks so much!,Made these muffins twice. Enjoyed them, but thought they were a little dry, especially the next day. What would make them moister???
