Directions
Beef-Barley Soup,Hearty, easy one dish meal that cooks itself while you’re gone. Serve with salad and bread, and you have a whole meal.,Very nice, added 1/2 tsp thyme and a few bay leaves. Left out the corn and beans, added a pinch of sugar instead and boiled on stove top for 15 min then simmered for 2 hours. Probably added 5 to 7 cups additional water as it was way too thick,I had to agree with some of the other reviewers who did not understand the 5 star rating. The flavor did improve at the end after stirring and letting it sit for awhile. In fact, it tasted even better the next day. I added a bit of thyme, a bay leaf and worcestershire sauce during the cooking. I give it 4 stars because it is a pleasant, nourishing nutritious, soup that works well in a slow cooker.
