Beef Tortilla Cake

Features:
    Cuisine:

I made half the recipe, using two taco-sized flour tortillas. I sauteed the white parts and about half green tops, leaving the rest as a garnish. As herbs are one of the few things surviving in my garden, used a medley of thyme, oregano, cilantro, chives instead of the dried. I also added a bit of dried chipotle, but felt there could be more spice. Perhaps a big of jalapeno. Also, used water instead of broth. I layered on a flat tray with some parchment paper underneath, which made slicing easier. Baked about 15 minutes with foil, ten without. Garnishes with sour cream, hot Pico de Gallo and more chopped fresh herbs.

Beef Tortilla Cake, This is a recipe from Ricardo. Posted for ZWT., I made half the recipe, using two taco-sized flour tortillas. Garnishes with sour cream, hot Pico de Gallo and more chopped fresh herbs., This was very good. I made it ahead of time a froze it. Thawed in fridge overnight and served it for lunch with a corn salad. Thanks for sharing
