    It's a very nice recipe, easy and quick to make. I miss a little spice and some fresh flavors (fresh herbs or scallion) I made this in two parts as is and then my own additions. I added some extra spiced peppers and some fresh herbs which I really felt added to the dish. Maybe that is just my taste, but it was a bit bland, but overall, a nice recipe. I did use frozen corn which I prefer and fresh garlic but I just thought it need a fresh flavor to this dish. It was easy, hearty and very nice.Made for PAC 2011

    Beefy Spanish Rice, Recipe I found on the internet years ago and I absolutely love it because it’s different Recipe yields enough for main dish, so cut down servings if you want it to go with a Mexican dinner, but I think it’s fabulous! And easy to make!     In a Large Saucepan Over Medium Heat, Heat the Oil.

    Add the Rice, Onion and Bell Pepper and Saute For 5 Minutes, or Until Onions Are Tender.

    Add the Ground Beef and Saute Until Browned.

    Drain Excess Oil and Fat.

    Add the Corn, Tomato Sauce, Ketchup and Water.

    Reduce Heat to Low, Cover and Simmer For 20 Minutes or Until Rice Is Cooked, Stirring Occasionally.

    Season With Salt, Pepper and Garlic Powder to Taste.
