16 small corn tortillas (or so)

My family loved it–even my finicky daughter , This was good and easy to make I did make a few adjustments because I didn’t have fiesta nacho cheese soup used cheddar cheese soup and added a tad more salsa then called for The recipe didn’t state what size pan to use so used a 13×9 but next time I think I would put it in a smaller pan as I didn’t think the burger went as far as it should I also used more cheese then called for as we love cheese This was a tasty, easy weeknight meal , Great casserole omitted the pepper and onion as DH won’t eat them Completely forgot the salsa 🙁 used con tortillas also added refried beans Soo good, thanks for posting!

    Brown Beef and Drain Fat.

    Add Onion, Garlic and Bell Pepper and Cook Until Soft.

    Add Chopped Tomatoes, Enchilada Sauce, Chili Powder and Cumin.

    Bring to a Boil.

    Reduce Heat and Simmer Uncovered For 20 Minutes.

    Grease a 9 X 13 Pan or 3 Quart Casserole.

    Fry Tortillas.

    Put 1/3 of the Meat Mixture Into a 9x13 Casserole Dish Followed by a Layer of Tortillas, Cheese and Olives.

    (note: I Cut Some of the Tortillas in Half to Make Them Fit Better in the Pan) Repeat Layer and Then End With Sauce.

    Bake at 350 Degrees For 30 Minutes.
