Beet-Carrot-Apple Salad, Grating beets can admittedly be a messy business, but it’s worth it when you taste the delicious end result. Go ahead…get your hands red!, I am amazed, I don’t actually normally like beets, my husband does and we had beets in the house so I looked and found this recipe for a night when we had a few friends over. I’m so pleased! We will definitely be making this again. It looks beautiful and tastes great. I also did not have raspberry vinegar in the house, but I mashed 2 strawberries with white vinegar and made everything else as instructed, it was delicious! Four of us at dinner expressed skepticism over beets, but everyone cleaned their plate!
