Go ahead…get your hands red!, I am amazed, I don’t actually normally like beets, my husband does and we had beets in the house so I looked and found this recipe for a night when we had a few friends over. I’m so pleased! We will definitely be making this again. It looks beautiful and tastes great. I also did not have raspberry vinegar in the house, but I mashed 2 strawberries with white vinegar and made everything else as instructed, it was delicious! Four of us at dinner expressed skepticism over beets, but everyone cleaned their plate!

    Wash and Tear Leaf Lettuce Into Bite Sized Pieces and Arrange in Salad Plates.

    Place Beets, Carrots and Apples in Three Separate Mounds on Each Plate.
