Ingredients

Adjust Servings:

2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
4 large eggs
1 1/4 cups vegetable oil
1 cup white sugar
1 cup light brown sugar, packaed (or use 2 cups white sugar)
3 teaspoons vanilla
3 cups grated carrots
1 (8 ounce) can crushed pineapple, well drained
1 1/2 cups chopped walnuts or 1 1/2 cups pecans

    Set Oven to 350 Degrees F.

    Grease and Flour a 13 X 9-Inch Baking Pan.

    in a Medium Bowl, Combine Flour, Baking Soda, Baking Powder, Salt and Cinnamon.

    in a Large Bowl Using an Electric Mixer Beat Together Eggs, Oil, Both Sugars and Vanilla Until Very Well Blended.

    Mix in the Carrots, Crushed Pineapple and Walnuts.
