1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 cup chopped fresh cilantro
2 large eggs, beaten
1 teaspoon salt

1/4 cup cornmeal
1 tablespoon vegetable oil

    Black Bean Burgers, My vegetarian friend made these and I got to try them. I thought they were delicious and am posting so I can make them for my family. Thanks Claire. Recipe adapted from Southern Living., My husband hates cilantro, what would you recommend as a substitute?, This was a huge hit with my teenage daughter and myself! I had Cilantro that I had dried, didn’t add the peppers and was out of cornmeal so used from a Jiffy Corn Muffin box but these were so good! used olive oil instead of vegetable oil as well.

    Steps

    Coarsely Mash the Beans With a Fork or Potato Masher.

    Mix Together the Mashed Beans, Oats, and Next 5 Ingredients.

    Shape Mixture Into 8 Patties.

    Mix Together the Flour and Cornmeal; Dredge Patties in Flour Mixture.

    Let the Oil Get Hot in a Large Non-Stick Skillet Over Medium-High Heat; Cook the Patties For 5 Minutes on Each Side or Until Lightly Browned; Drain on Paper Towels.
