Ingredients

Adjust Servings:
2 tablespoons olive oil or 2 tablespoons coconut oil
2 medium onions, chopped
2 - 3 celery ribs, minced
2 carrots, peeled, sliced thin
4 - 6 garlic cloves, minced
1 1/2 tablespoons ground cumin
red peppers or tabasco sauce, to taste
salt and pepper
4 (15 ounce) cans black beans, rinsed, drained
1/4 cup chopped fresh cilantro
1 quart chicken or 1 quart vegetable broth
1 1/2 limes, juice of
diced avocado, for serving
cilantro leaf, for serving
corn tortilla strips, for serving

Fry Onions Lightly in Oil Till Pale. Add Celery and Carrots. Cook Till Lightly Gold.

Stir in Garlic, Cumin, and Hot Pepper. Fry 1 Minute. Season With Salt and Pepper.

Add Beans, Cilantro and Broth. Bring to the Boil. Season With the Juice from 1 Lime, Squeeze the Remainder Over the Diced Avocado Garnish.

Simmer the Soup 15 Minutes, to 30 Minutes.

Pure 1/3 of the Soup. Return to Pot. Serve Immediately in Shallow, Warm Bowls, Correcting For Salt and Pepper, as Needed. Garnish as Desired.
