1/2 teaspoon salt
1 cup skim milk
1/2 cup egg substitute
1/2 cup unsweetened applesauce
1/4 cup splenda granular (or 1/2 cup to taste)
1/2 cup frozen blueberries
1 - 2 teaspoon lemon zest
1 teaspoon vanilla extract (optional)

I don’t consider this or any baked goods Core (abuse potential) , there are some that agree and some that don’t, it’s up to you. But for 3 pt… it is a good and filling breakfast or snack. Thanks!!,My husband is off flour, and totally enjoyed this as a snack cake. I added 1/2 cup of corn flour and use whole eggs and br. sugar. Thank you for a lovely new fav. Making it today with apple, raisin, walnut and cinnamon. Yum!
