Blueberry Coffee Cake,I’m always on the lookout for blueberry recipes to use up some of my wild Maine blueberries. This one was found on the net, unfortunately I don’t remember the site.,This was extremely good. The only change I made was that I substituted in unsweetened vanilla oat milk since that’s all I had on hand. In an 8 x 8.5 square glass dish it took much longer to bake, though – around 55 min to an hour total. It’s a little difficult to tell when it’s done because the brown sugar mixture on top was always moist, so I couldn’t really rely on the ol’ toothpick method to tell when the cake itself was done. Still, it came out perfectly and I’ll definitely be making this again soon.,Mine turned out really nice! The only problem is that the top is super crispy. How do you make the topping more moist? Mine is like crunchy crispy … Also Id recommend to bake until tooth pick comes out clean

In a Medium Mixing Bowl, Blend Together 1 1/2 Cups Flour, Sugar, Baking Powder, Salt, Oil, Milk, Egg and 1 Cup Blueberries. Beat Thoroughly For 30 Seconds and Spread in a Greased Round 9x1-1/2-Inch Pan or an 8x8x2-Inch Pan. |

Combine 1/3 Cup Flour, Brown Sugar, Cinnamon and Butter. Sprinkle Over Batter and Top With the Remaining Berries. Bake in a 375f Oven For 25 to 30 Minutes, Until Done. Don't Overbake. |
