Breaded Chicken Cutlets With Lemon Basil Sauce, This is best served with mashed potatoes, and corn because the sauce is delicious on all 3!Its important if you have the regular boneless chicken breast, to slice it into cutlets. You might want to double the sauce recipe if you like a lot sauce over your meal, What is “complete seasoning”? I’m a fairly sophisticated cook and have never heard of it., A lot depends on what seasoning is used first on the chicken. used a bit of Anita’s Season-All which I just had shipped to me from TX as you can’t find it in stores anywhere, but I would guess if you like more herby flavor, Nature’s Seasoning might be good too. Secondly, I only made enough “sauce” to drizzle over the chicken which I served over mashed new/red potatoes with skins. used fresh basil and I only had about an ounce or so of lemon juice on hand but it actually worked very well for the two servings I made. I let the lemon, butter, basil mixture “steep” while cooking the chicken and my side dishes, and that really brought out the great fresh basil flavor, and the lemon, just an accent, gave a nice ‘kick’ to the dish. Oh, and it only required one egg for a pound of chicken cutlets, mixed with half & half enough to coat the chicken and that worked great. This was really good–will make it again.
