Broccoli Cashew Salad, I love broccoli salads and with the addition of cashews, this is lovely! Adapted from Cooks.com., I made this with cauliflower added and it was amazing, I made this using half low fat mayo and half fat free thick plain yogurt. I skipped any version of bacon and really loved the outcome. For me the cashews were equal stars with the broccoli and everything played beautifully with everything else. Oh, and used Splenda for the sugar. Thank you Sharon for another lovely recipe.

Combine Broccoli, Bacon Bits, Onion and Raisins in Large Bowl. Toss With Mayonnaise Dressing. Chill For Several Hours or Overnight. Stir in Cashews Before Serving. Enjoy! 6 to 8 Servings. |
