Broccoli Cheese Souffle,Nice and light side dish. Left overs are great heated up for breakfast.,This was my very first souffle. I, too, was concerned about raw onions, so I sauteed them for about seven minutes, and cooled them completely. Also, because I’ve never made one, I didn’t know if I was supposed to let the cheese/broccoli mix cool before I added it to the egg whites. So I turned off the heat and left it on the stove while I whipped the egg whites. I didn’t grease the dish, or add salt. I followed the recipe exactly and neither was mentioned. The soufflee collapsed within about 30 seconds, but I think that’s what it’s supposed to do? It also stuck to the dish, but not so much that I couldn’t get it out. It did make for a rough looking portion though. With all of that said, this is honestly one of best things I’ve eaten in my life, no kidding! Fluffy, and moist, cheesy, and delicate! I could have eaten the whole thing in one sitting. Had to remind myself that there’s a cup of cheese in it! Husband loved it as well, and we have one portion left. Is this supposed to feed six? No way! It’d only feed one if I had my way! This is awesome! Would love to have my questions addressed if possible.,Yum!! Very easy to put together, however, I was confused about the onions. I assumed they should be sauteed, but the instructions didn’t note when, and I can’t abide by raw onions. I ended up “cheating” and used dried minced onion and added it with the broccoli. It worked great. I increased the recipe so I could use up 5 egg whites. My husband and I and two kiddos (ages 4 and 1) ate nearly the whole thing for dinner. (I can’t imagine that the original recipe could serve six.) Both of the kids loved it!

Preheat Oven to 350 F, Fill Round Cake Pan or Pie Pan With 1/2 Inch Boiling Water. |
