1/4 cup white cornmeal (used yellow) or 1/4 cup yellow cornmeal (used yellow)
1/4 cup fine dry breadcrumb
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dried dill
1/8 teaspoon pepper
1 lb fish fillet (fresh or frozen thawed)
1/3 cup milk
3 tablespoons butter or 3 tablespoons margarine, melted
tartar sauce (optional) or browned butter (optional)

    I made this whiting tonight for Good Friday. It was delicious!!! I didnt have cornmeal, so used Italian bread crumbs. And shook some Red Robin on instead of paprika. It was wonderful. Crispy on the outside and moist and flaky inside. Ive never cooked whiting before. This is now one of our go to quick meals.

This recipe is courtesy of Southern Living “Our Best Easy Weeknight Favorites” cookbook.,I made this whiting tonight for Good Friday. It was delicious!!! Ive never cooked whiting before. This is now one of our go to quick meals.,I made this last night and it was delicious! I am a person who ALWAYS uses tartar sauce on fish. But this was so good that I did not want to change the taste by adding tartar sauce. The only slight alteration I made to the recipe was adding a half teaspoon of lemon zest to the coating mixture. The seasoning was just the right amount, not running short or having a lot left over. 450 seemed awfully hot to me so I cooked it at 400 for 20 minutes and it came out just perfect. used whiting fillets. Thank you for such an EZ to make and delicious recipe.

    Preheat Oven to 450f.

    Combine First 6 Ingredients in a Shallow Dish.

    Dip Fish Fillets Into the Milk and Coat With Breading Mixture.

    Place Fish in a Lightly Greased 13x9 Dish or Cookie Sheet; Drizzle With Butter.

    Bake For 10-15 Minutes or Until Fish Flakes Easily With a Fork.
