Buttermilk Apple Muffins,I’m always looking for recipes which use up the rest of the buttermilk I’ve got in the fridge. This one fits the bill perfectly…a nice blend of flavors with the apples, nuts and cinnamon.,These were WAY too sweet; I made them with 1/2 cup sugar in the batter and 1/8 cup in the topping and I still found that the sugar overwhelmed the other flavors and made the result disappointing. I did not have Granny Smith apples on hand, their tartness would have helped. If I ever make them again, I will not only cut down the sugar further but add oats and fresh ginger.
