Directions
Cajun Casserole, This is one of my husband’s and father’s favorite version of Jambalaya It is low fat and good for people watching their diet This came from a Low-Fat, Good-Food cook book, I prepared this dish as directed and after 45 min in the oven my rice was still rock hard I assume this was not the intended result , Warm and comforting I had to substitute a few things (smoked ham instead of the bacon, carrots in place of celery, red and yellow bell peppers) and didn’t have the herbs, but it was VERY flavourful! While I was cooking, the smells were driving me nuts, it smelled so good:) There was still liquid left after it was done, I don’t know if thats how its supposed to be Thank you for sharing, Jacie!
