Canned Green or Wax Beans (Water Bath Method),These are almost exactly like store-bought canned beans. I prefer fresh or frozen beans but every year I can a few jars just to use in 3 (or 5) bean salad. From Company’s Coming Preserves cookbook.,I made these a few days ago. My concern was botulism (yours should be too!) I waited 2 days then opened a jar & checked the acidity. It tests out higher than 4.6 so the risk is higher than I like. I did find on a USDA website however that you can kill the deadly spores by boiling them on high for 10 minutes before consuming – assuming you DID waterbath them for 30 minutes and all the jars sealed.,Can you use this same method with carrots and parsnips or potatos? I did the beans this way last year and they were great so did them again the same way this year. They stored just fine and no vinegar taste. Ty
