Cantaloupe With Chicken Salad, A simple chicken salad served in a cantaloupe half I haven’t tried this yet, but hope to very soon , I really enjoyed this meal it was light and refreshing used low fat mayonnaise and sour cream I also minced the celery I like my cantaloupe really ripe and juicy so the only thing I would change for next time is I’d cut the cantaloupe in small pieces and just add it to the mix and eat it our of a regular bowl The problem was as I cut into the cantaloupe the mix just became a bit watery
