    Caribbean Chicken With Veggies,Not sure that this is actually Caribbean chicken, but that’s what it was called when I received the recipe. It’s very good and fairly healthy. I am adding it so that I don’t forget it. I hope that you enjoy.,Our family thought this was just okay. The shredding of the zucchini was a little time consuming. There was a little too much salsa and tomato juice and the zucchini kind of got lost in the mixture. The chicken was a little bland for our tastes. I think if you just chopped the zucchini, and didn’t use quite as much sauce it would be better. I also think if there was a little salt added to the chicken it might add some more flavor.     Grate Zucchini and Squash and Set Aside.

    in a Small Skillet Heat Olive Oil.

    When Oil Is Hot, Add Chicken Breasts.

    Saute For About 5 Minutes on 1 Side.

    Adding Garlic to Pan and Flip Chicken.

    When Chicken Is Done, Remove from Heat to a Separate Plate With Garlic.

    Heat Salsa With Tomato Juice to a Simmer.

    Once Salsa Mixture Begins to Simmer, Add Cumin to Taste, Turn Heat to Low.

    Saute Grated Vegetables For About 1 Minute.

    Serve Chicken on Bed of Grated Vegetables With Salsa Mixture on Top.
