Caribbean Chicken With Veggies,Not sure that this is actually Caribbean chicken, but that’s what it was called when I received the recipe. It’s very good and fairly healthy. I am adding it so that I don’t forget it. I hope that you enjoy.,Our family thought this was just okay. The shredding of the zucchini was a little time consuming. There was a little too much salsa and tomato juice and the zucchini kind of got lost in the mixture. The chicken was a little bland for our tastes. I think if you just chopped the zucchini, and didn’t use quite as much sauce it would be better. I also think if there was a little salt added to the chicken it might add some more flavor.
