Carrie’s Banana Cake,This cake was brought to a luncheon by a coworker. It was delicious. Since then, I have been making it, people love it and it is a great, easy way to use up those overripe bananas that sneak up on you.,The frosting was gritty and runny. used a handmixer. Ingredients was too heavy for my blender. Small tub of cool whip I found after researching is 8 ounces. Can the instructions be edited to be more specific for cooking dummies like me?,I made this cake for a potluck and everybody said it tasted like “MORE”. I gave the recipe to a friend who substituted a can of pumpkin for the bananas and used instant cheesecake pudding mix in the frosting. She said it turned out great and her boys loved it. I’ll have to try that too.
