Slice Carrots Into About Three Pieces. |

Cook Carrots in Boiling Water Until Crisp-Tender, About Five Minutes. |

Drain, Rinse With Cold Water and Drain Again. |

While Carrots Cool, in Medium Bowl, Combine Lemon Juice, Sugar, Paprika, Cumin, Cinnamon, Salt and Cayenne Pepper. |
