Casserole With Black-Eyed Peas,This is a delicious casserole and it’s so easy to make. I’ve put it in the crockpot for 4 hours on low instead of baking it, and that works great, too, especially if you’re taking it to a pot-luck. Southwestern U.S. is where you’ll find this great recipe.,I was looking for a black eyed pea recipe to make for New Years Day and came across this one. Sounded good to me! However, when I went to the store to shop (on NYE) they were completely sold out of black eyed peas (canned or dry). HAHA, probably the only day of the year that happens! I decided to get another variety of bean and picked adzuki, only to discover as I was making it today that they are considered auspicious on New Years Day in Japanese and Asian cultures – woo-hoo! We are vegetarian, so used veggie ground beef instead. I also used black rice, which I cooked in the steamer. I then put everything in my crock pot. We were hungry so didn’t wait a full 4 hours as I later saw the recipe recommended… probably only one hour. It tasted great, however, the onions weren’t really cooked. So, for future I will either cook the onions first or make sure I wait the full 4 hours in the crock pot. Either way, great recipe!,Used adzuki beans instead of black eyed peas. Replaced ground beef with vegetarian ground beef.
