1 medium seeded tomato finely diced
1 tbsp chopped cilantro
1 tbsp minced red onion
1/2 jalapeo minced
1/4 yellow bell pepper finely diced
1/2 tbsp olive oil
3 drops tabasco sauce
3 tbsp fresh lime (1 or 2 limes)
kosher salt and freshly ground black pepper as needed
2 large cucumbers thirty 1/2-inch-thick slices
fresh cilantro for garnish
