Cheddar Meat and Potato Casserole, Being inordinately fond of one dish meals, casseroles and the like, I couldn’t resist this one and lightening it up just made it better!, This did not turn out so well for me It was very dry, had very little taste, and I had to throw the whole thing out , It was really good, but I changed a lot of things Instead of potato flakes used 2 containers of Country Crock garlic mashed potatoes used 2 cups of cheese, fresh onions, added Worcestershire sauce, omitted the sour cream I put the meat and veggies on the bottom, the cheese on that, and then the potatoes on that, which I sprinkled with paprika and pepper to be more like a shepards pie The original recipe was a good place to start, though I guess it ended up more like a shepard’s pie in the end
