Adjust Servings:
1 garlic clove, halved crosswise
1 1/2 cups dry white wine preferably swiss, such as fendant
1 tablespoon cornstarch
2 teaspoons kirsch
1/2 lb emmenthaler cheese, coarsely grated 2 cups
1/2 lb gruyere, coarsely grated 2 cups
cubes french bread, on fondue forks or long wooden skewer

Cheese Fondue

    This probably was the best AND the easiest Fondue I have ever made! We have our traditional fondue dinner every new years eve and I was looking for a new recipe to try. This sounded pretty easy so I tried it! I didn't use the Kirsch since I didn't have it and I didn't substitute anything for it either and it was delicious! I hadn't ever thought of making it right in my fondue pot why I don't know? and that was great! I have a cuisinart electic pot and it was fabulous to not have the extra pot to wash! I served with steamed broccoli, brussel sprouts, potatoes, carrots, fresh mushrooms, rosemary bread, and apples. A wonderful way to spend time with my family ushering in the new year! Thanks for my new go to fondue recipe! I like that it has just a few ingredients. Thanks again!

    Rub Inside of a 4-Quart Heavy Pot With Cut Sides of Garlic, Then Discard Garlic.

    Add Wine to Pot and Bring Just to a Simmer Over Moderate Heat.

    Stir Together Cornstarch and Kirsch in a Cup.

    Gradually Add Cheese to Pot and Cook, Stirring Constantly in a Zigzag Pattern not a Circular Motion to Prevent Cheese from Balling Up, Until Cheese Is Just Melted and Creamy Do not Let Boil.

    Stir Cornstarch Mixture Again and Stir Into Fondue.

    Bring Fondue to a Simmer and Cook, Stirring, Until Thickened, 5 to 8 Minutes.

    Transfer to Fondue Pot Set Over a Flame and Serve With Bread For Dipping.
