Cheese Spinach Quesadillas, When I had this at our local Mexican restaraunt, I enjoyed it so much that I recreated it at home and I think this is a good likeness! This is pure comfort food to me! Feel free to experiment with this recipe! makes 2 for a main dish, 8 for appetizers, This a good basic recipe, but I add a few more ingredients to mine A can of black beans, a couple of tsps of lemon juice and about a tsp of ground cumin , I dont understand the spinach it talks about when cooked Why would it even say that ? Im wondering if you cook it before putting on tortillas! I would hope not!
