Stuffed Zucchini, This tastes like lasagna., Made this tonight. We all loved it. We made fresh batches of homemade pasta sauce today, so once the boats were stuffed used ground beef, we topped the meat mixture with the fresh sauce and fresh mozzarella cheese. I also had 1/2 of a giant garden tomato that I didn’t want to waste. When the meat mixture was made, I tossed the fresh diced tomato in the mixture. I can’t wait to make this again. Thanks., This was awesome. used pork italian sausage and one large zucchini, made 4 portions. Added a little extra cheese. Will be making this again.
