Ingredients

Adjust Servings:
3 eggs
1 1/2 teaspoons lemon juice
1 cup cooked brown rice
1 1/2 teaspoons dried parsley
2 tablespoons grated parmesan cheese (optional)
1 1/2 tablespoons instant minced onion or 1 small onion, chopped and sauted
salt and pepper
6 - 8 cups fresh spinach, chopped and steamed (one large bunch)
1 cup cottage cheese
1 cup grated cheddar cheese
4 eggs
salt and pepper
1 pinch cayenne pepper

Cheesy Spinach Casserole

    This turned out well. I chose to leave out the parmesan cheese as I felt the flavor would be lost in the dish. I also used egg substitute to save some calories. I made rice especially for this dish, but I can see where leftover rice would come in handy. Unfortunately I didn't have brown rice, but it still came out tasty. I also used onion powder instead of chopping an onion. I will be making this again--thanks for posting.

    Cheesy Spinach Casserole, This is one of my favorite side dishes to make Not only is it really good, but it is also quick, inexpensive and easy to make It tastes so good, I think kids may even like it I don’t recall where I found this receipe, I think from an old cooking magazine , quite tasty! it filled a 5×7 pyrex dish and would probly serve 4-6 people as a side dish easy to prepare, would reccommend!, This is one of my favorite side dishes to make Not only is it really good, but it is also quick, inexpensive and easy to make It tastes so good, I think kids may even like it I don’t recall where I found this receipe, I think from an old cooking magazine

    Preheat Oven to 350.

    Mix the First 7 Ingredients Together.

    Separately Mix the Spinach Mixture Ingredients.

    Spread the Ingredients from the First Mixture in the Bottom of a Greased Casserole.

    Spread the Spinach Mixture Over Them and Bake at 350 Degrees Until Firm, 45-60 Minutes.
