Cheesy Zucchini and Rice Squash Casserole Recipe

    This recipe is delicious. I make it as a side dish or add shredded chicken for a main dish. It is time consuming with cooking down the zucchini and draining it but all well worth it. I do disagree with the nutritional information. A 7 ounce serving is closer to 300 calories than 200 hundred. If you want to cut some calories, use egg beaters and take out the cheddar cheese. It's still good.

    Combine First 3 Ingredients in a Dutch Oven, Bring to a Boil, Cover, Reduce Heat, and Simmer 20 Minutes or Until Tender.
