Chicken and Broccoli Thai Curry, This recipe started from the back of a Thai Kitchen curry paste jar. A few modifications and I lost my main reason for wanting to go out for Thai. Now we can have it whenever we want in the comfort of home. Use chicken or beef or eliminate the meat and use your favorite vegetables. This is a versatile and tasty recipe., This was really good! I never would have been bold enough to try making curry, but this recipe was so easy and the flavor was fantastic! Some reviewers have complained that it was bland, but I think you need to taste the sauce as you go to decide if more curry paste should be added. used the 2 Tbsp., but still wanted a bit more flavor, so I added another tsp. until the flavor felt right. I also added cornstarch at the end to thicken the sauce. Really yummy and will definitely become part of my regular meal rotation., How did it turn out? Like fish soup with a hint if peach color. It was like water, way to much fish sauce! Add twice the curry & half the fish sauce, had to thicken w/corn starch. Definitely will not make again.
