    I found this recipe in a cookbook from the library. It turned out to be fast and delicious! My family really enjoyed it.
    I didn't make the sauce because I didn't have the red pepper or the relish. I just served it with spicy mayo on the side. It tasted good without any sauce...so don't think you have to have any but its a nice addition.
    This works great with the rotisserie chicken you get at the store and also would be good with leftover cooked turkey. Its something different to make after the holidays that is not a casserole.
    NOTE: If you just have salted saltines,just omit the salt with the egg.

My DH had never had chicken croquettes and he raved about them I had made the PA Dutch Chicken and Waffles recipe which was fabulous I cooked twice the chicken called for so I would have enough to try your recipe I made it exactly as directed and chilled the mixture for about an hour and a half and forming them just took two minutes The sauce was PERFECT with the nice crisp croquettes This recipe is a KEEPER! I also made the red onion marmalade (recipe #189190) earlier in the day and had that nice and cold in the frig A nice addition to the hot and zippy croquettes! Thanks for posting!!!

    Melt Butter in Saucepan.

    Add Onion and Saute Until Tender.

    Add Milk Slowly and Cook, Stirring Constantly Until It Thickens.

    Remove from Heat and Mix in the Bread and Chicken.

    Shape Into 4 Patties.

    Dredge Each Patty in Flour, Then Dip in Egg and Then Coat With Breadcrumbs.

    Put Enough Vegetable Oil in a Skillet to at Least 1/2 Inch Deep When Heated.

    Fry Croquettes Until Browned, Turning Once.

    Drain on Paper Towels.
