Chicken Curry Casserole, This is a recipe that has been adapted from one of those treasured church cookbooks My family has been enjoying this meal for over nine years now and still love it , I make this dish a bit differently I steam my small bite size broccoli pieces in the microwave, on level 7 for 8 minutes It comes out cooked, but firm Then I take my boneless chicken breasts and cook them in the microwave as well When cooled down cut them into bite size pieces I put the broccoli in the bottom of a well buttered casserole dish, then cover with the chicken Over that I put the mixture of evaporated milk, can of cream of chicken soup, mayonnaise, lemon juice, curry powder, cheddar cheese While I have the oven warming I put 4 or 5 pieces of bread in the oven to brown As soon as the bread is browned, I take them out and butter them on both sides, then cut them into crouton size pieces Take everything from the bread, all the crumbs and put that on top of the creamed mixture Put in oven for 1/2 hour or until the top is heated through and top is bubbly , My family liked it, but weren’t super excited I’d never boiled chicken before I thought it turned out pretty tasteless compared to just cubing and browning it, so I’ll do it that way next time Also, I agree that some onions would be a good addition
